Vegetarian Taco Soup: A mostly ALDI Recipe

I know, it’s been a good couple of weeks since our last almost all ALDI recipe. I don’t know how it works at your house, though, but the start of summer is almost always crazy over here.
So now let’s start to get back on track with a hearty new Meatless Monday option: Vegetarian Chipotle Taco Soup features cauliflower & mushrooms instead of the more traditional ground beef, in an entirely meatless, yet entirely flavorful recipe.
This soup recipe may, however, just be a convenient excuse to enjoy some of these Tuscan Garden crispy sea salt and lime poblanos. Check to see if they’re still available in your Amazing Aisle of Random — they showed up a couple of weeks ago, but tend to reappear 2-3 times a year. Fair warning: These things are somewhat addictive!
