Cold weather always brings out the comfort food in me, and today’s vegetarian enchiladas skillet recipe is no exception. So much flavor, and you can really make yours pop by serving it with a little sour cream and avocado.
I mean… it’s a big cast iron skillet full of cheesy enchiladas goodness. How could this be wrong? And there’s no rolling required, making this the easiest enchiladas recipe you ever did see.

I used Casa Mamita organic chipotle lime salsa to give mine an underlying smoky flavor, plus the Happy Farms cream cheese that’s still on sale for the holidays, a can of Pueblo Lindo mild green chiles, some SimplyNature Organic black beans… and cooked it all up in my old ALDI cast iron skillet. 😉
