Squash-age and Harvest Vegetable Stew: An almost all ALDI recipe

As I type this post, I’m looking at the weather alerts for my neck of the woods and see a winter weather advisory for tonight that predicts 3-6″ of snow. November 10 is just too early for any of this, I think!
But, at least this impending doom is a good excuse to scratch up a batch of seasonal comfort food… as in today’s Squash-age and Harvest Vegetable Stew recipe.
You can pick up just about everything you need at ALDI for your own pot of squash-age harvest vegetable stew; although acorn squash is seasonal for fall, and you’ll need to use smoked paprika from your pantry.
