Shrimp & Mushroom Quesadillas — A great use for your ALDI Shrimp!

It’s another easy 30 minute weeknight dinner recipe where you don’t have to turn on the oven on a summer’s day — you know, when it may be a hot & humid 94 degrees out. (Yes. It is indeed a less-than-comfortable 94 degrees here in Chicago as I type…) So. How about some simple shrimp & mushroom quesadillas?
You can make these easy quesadillas either with the peeled and deveined Gulf shrimp that were a special buy recently, or with ALDI’s everyday Fremont Fish Market EZ peel shrimp. This recipe is also super easy to modify to your own family’s tastes or to take advantage of sale produce: Throw in a little bell pepper or jalapeño, add spinach, use extra cheese, whatever works for you.

I used ALDI tortillas, shrimp, and mushrooms to make today’s quesadillas, but actually chose to season them with Spice Islands taco seasoning from Costco instead of one of ALDI’s Casa Mamita taco seasoning packets. This stuff is soooo good, you guys: It has a richer flavor than the packets, and incorporates both chipotle and cocoa powder. Plus, it’s easy to throw just a little bit into a smaller recipe where you might not need a whole packet. (You get 24.5 oz in their larger bottle, too, which is over 24 seasoning packets’ worth.)
