Sometimes I just impulse buy things at ALDI because it’s fun to try something new, but then don’t actually figure out what to do with them until later. For example: This SimplyNature Organic black soybean spaghetti — which is jam-packed with protein and fiber — seemed interesting, so I’ve been noodling around with ideas on what to pair it with for the past couple of weeks. (Sorry! 🙂 )
But then it hit me: This black soybean pasta is pretty low in net carbs, so why not serve it with an easy low carb weeknight dinner idea like the ever-popular egg roll in a bowl? Chewier and denser than regular spaghetti, this pasta proved to be the perfect drop for some crisp-tender egg roll in a bowl veggies and seasoned ground turkey.
Most of the ingredients in this easy 30 minute weeknight dinner recipe can be found over at your local ALDI (although the ginger and sesame oil are seasonal, and I’m not sure I’ve seen turmeric there).
