Chipotle Taco Soup — An All ALDI Recipe!
Maybe it’s just me… but sometimes when I’m thinking about easy comfort food recipes, it’s hard to decide whether to go for a big batch of tacos, or a big pot of soup. Today’s easy Chipotle Taco Soup recipe stems from just this kind of thought process, because sometimes you can just mash up two ideas a la you got your chocolate in my peanut butter.
Although this soup, it contains neither chocolate nor peanut butter, so don’t be concerned! It does, however, contain ground beef, chipotle peppers, diced tomatoes with green chilies, and taco-inspired seasonings — plus a little red bell pepper and corn for a pop of sweetness to contrast with all that smoky spice.

Today’s all ALDI recipe takes advantage of some of my favorite ALDI food finds. Pueblo Lindo chipotles in adobo are always a good buy (at $.99 in my store), and just a little bit adds such an amazing smoky spice to so many recipes. This easy taco soup recipe uses just a little bit out of the can, but you can transfer the rest into a tightly covered plastic container and it will last a long time in the fridge.
Alternatively, you can always puree and freeze the remainder of the can, portioning it out in 1-2 Tbsp portions for use in future recipes. Such as, say:
- Slow cooker chicken enchilada chili
- Roast chipotle chicken & potatoes
- Black bean, tomato, and spinach frittata
- Slow cooker chipotle chicken chili
- Vegetarian chipotle cauliflower tacos
… and so many more!
