Slow Cooker Chicken Enchilada Chili — could be an All ALDI recipe!

It’s way too cold and ice-stormy out for my liking tonight, so I was really quite pleased to stay inside with a fresh batch of slow cooker chicken enchilada chili. Just about all of my ingredients here were from ALDI, although I had a cheap can of some other store brand’s corn on hand and just tend to prefer the big jars of California minced garlic and the Spice Islands taco seasonings from Costco.
You could very easily make this easy chicken chili recipe all ALDI, though; it features their enchilada verde sauce, chipotles in adobo, chopped green chiles, canned beans, and more.

What do you prefer to pick up at Sam’s or Costco?
Although I love ALDI and their prices, there are a few things I do still pick up at the warehouse club. Either I prefer the quality there, or the price is better, or they carry something I just can’t find at my local ALDI store.
